
ESSENTIAL TASKS
Top Physical Requirements:
• Bend, crouch, stoop, kneel, and reach and perform
repetitive hand and arm movements frequently
during food preparation and cleanup.
• Lift and carry ingredients, equipment, or trays
weighing up to 50 pounds from floor to chest height.
• Stand for extended periods of time while mixing,
shaping, baking, and plating products.
• Safely operate ovens, mixers, proofers, and other
commercial baking equipment.
• Demonstrate manual dexterity to safely handle small
tools, utensils, and ingredients.
• Work safely in hot, humid, cold, or confined
environments (including walk-in coolers/freezers,
prep tables, and storage racks).
• Maintain balance and mobility on wet, uneven, or
slippery kitchen floors.
• Work within established time constraints to maintain
productivity and product quality.
• Maintain cleanliness and sanitation standards in
accordance with food safety regulations.
• Tolerate moderate to loud noise levels, including
sudden noises.
• Tolerate flashes of light and/or fire, including
unexpected flashes.

• Ability to communicate in verbal, written, and
electronic form.
• Adapt to new baking techniques, ingredients, and
production methods.

correct errors during production.
• Follow multi-step recipes and standardized kitchen
protocols in proper sequence.
• Breaks are limited to scheduled times, and personal
phone use is restricted except during designated
break periods or when required for training
purposes.
• Demonstrate patience, persistence, focus, and
attention to detail in all tasks.
• Maintain composure and professionalism in a fast-
paced, high-temperature kitchen environment.
• Ability to retain, recall, and follow all industry and
program safety protocols.
• Ability to manage tasks and complete assigned
activities within expected time constraints.
• Apply basic math skills and time management to
baking and production procedures.
• Read, interpret, and follow recipes, instructions,
formulas, and measurements accurately.
• Collaborate safely and effectively with instructors,
peers, and kitchen staff.
• Maintain continuous engagement in assigned
training activities for up to 8 hours per day in an
industrial learning environment.
• Exhibit pride in product presentation, quality,
sanitation, and safety standards.

PROGRAM SCHEDULE
Students attend class from 4:00 PM to 9:00 PM Monday through Thursday. This schedule provides 5 hours of instruction
each day for a total of 20 hours per four-day week, excluding holidays and school breaks as outlined in the current school
calendar.
CLASSROOM/LAB PROCEDURES
All students in the Baking and Pastry Arts program are expected to complete all competencies in the Florida Department
of Education's Curriculum Frameworks. To obtain this goal, instruction will be given in the form of lectures, learning
guides, demonstrations, audio-visual material, hands-on computer activities, discussions, field trips, guest speakers, and
laboratory experiences.
GRADING PROCEDURE
Using the grading scale set by Lake Technical College, students must pass each program category with a score
of 70% or higher. If a student does not meet the minimum cumulative grade of 70%, the final course grade
recorded in the Student Information System will reflect that the student was not successful.
