Top Physical Requirements:
• Fingernails must be natural, neat, and short.
• No fingernail polish or artificial nails are allowed due
to sanitation regulations.
• Jewelry is prohibited, with the exception of a
wristwatch or a plain wedding band.

• Stand, walk, bend, and reach frequently.
• Adhere to safety procedures to decrease personal
risk of burns, cuts, and falls.
• Maintain the physical ability to safely and effectively
perform industry-standard tasks.
• Ability to stand and maintain balance on kitchen
floors for extended periods of time.
• Operate ovens, mixers, and other equipment safely.
• Lift and carry ingredients and equipment up to 50
pounds for a reasonable distance based on industry
standards.
• Ability to handle hot pots, pans, and sharp knives.
• Be able to work in hot, humid, or cold environments
with temperatures from 0°F and 90°F.
• Perform repetitive tasks such as chopping, stirring,
and plating.
• Must be able to accurately perceive odors, tastes,
and visual cues.

PROGRAM SCHEDULE
Full-time students attend class from 7:30 AM to 3:45 PM Monday through Thursday with a 30-minute lunch period. This
schedule provides 7.75 hours of instruction each day for a total of 31 hours per four-day week, excluding holidays and
school breaks as outlined in the current school calendar.
CLASSROOM/LAB PROCEDURES
All students in the Professional Culinary Arts and Hospitality Program are expected to complete all competencies in the
Florida Department of Education's Curriculum Frameworks. To obtain this goal, instruction will be given in the form of
lectures, learning guides, demonstrations, audio-visual material, hands-on computer activities, discussions, field trips,
guest speakers, and laboratory experiences. Materials are reviewed and updated periodically to keep them as current and
as relevant as possible.
The laboratory is divided into three stations with an advanced second rotation of each. Students will be assigned to each
of the stations and progress through these stations according to ability. Specific lectures, learning guides, demonstrations,
audio-visual material, hands-on computer activities, and discussions coincide with each station.
